A dice is smaller and more uniform than a chop and larger than a mince. When dicing carrots, potatoes and other vegetables to incorporate into stews, rice, etc., aim for uniformity in size. This presents well, but also ensures more even cooking.
When appropriate, cook denser items like potatoes, carrots and root vegetables first, then add softer items last. Unless a recipe states otherwise (ie: fine dice), assume a dice of approximately 1/4 inch (6mm) square.
