Skewer

Culinary definition of skewer:  To thread food onto a metal, wood or bamboo skewer.

When preparing meat, seafood, vegetabels and fruit for skewering, cut or choose pieces that are more-or-less uniform in size, so that ingredients cook evenly and are easier to manage on the grill or grill-pan.  Also, take any round or spiral skewers you have in the kitchen and relegate them to plant-staking duty. 

Square-sided skewers or grill swords with very thin blades, are inexpensive and most important, they hold food 'in place', preventing individual pieces from spinning freely each time you try to turn the entire skewer.  Some grill swords have cuffs that slide back and forth on the blade, facilitating easy removal of cooks foods.

Fruit skewers (above right) make summertime desserts easy - especially for children - and are a reliable contribution to neighborhood pot-lucks and office parties.  Banana, apple and pear oxidixe quickly and turn brown, so use them only if fruit skewers will be consumed immediately.

✭ Dessert Skewers - Appy Style.   Managing dessert at a pass-around cocktail party or stand-up event is no easy task.  We have a fun, easy and delicious solution:  Place individual chunks of fresh fruits like strawberries, bananas, orange segments or kumquats, whole pitted cherries, even cubes of very dense spongecake -  individually onto medium-sized bamboo skewers (near one end so that the other end remains free for grasping) and pass them on a platter next to a small bowl of dark chocolate gnache for dipping. Two of these super-rich, high anti-oxidant treats (per person) is plenty.

Quick & Easy Dark Chocolate Gnache:  In a small saucepan, heat 1 cup heavy cream to just below boiling, remove from heat and add 10 ounces finely chopped or grated dark chocolate [50-70% cocoa solids] and a splash of orange or raspberry liquer or rum (optional) - reheating gently in microwave 10 seconds at a time, if neccessary.
