Culinary definition of simmer: To gently cook liquids or water at a constant temperature just below boiling (212°F | 100°C)

Liquids reach a simmer, just before boiling, when bubbles first start to form. Simmering temperatures range from 185°-200°F | 85°-93°C., but the best way to reach a simmer, unless otherwise noted, is to turn liquids up to a boil and then immediately reduce the heat slightly to a 'simmer'. Stocks, scratch-made tomato sauce, dumplings and matzah balls (right), all simmer gently for extended periods of time.
