Roulade of veal, eggplant roulade, spongecake roulade - all rolls of sorts. A jellyroll is a roulade, as is porchetta (porkloin wrapped in pork belly, with a layer of herbed stuffing). To simply roll an ingredient without 'stuffing' it or first spreading on a layer of some sort of filling - jellyroll spongecake with jam, for example - may technically be a roulade, but practically it isn't.

We love traditional German beef roulade or rouladen (right), but we prefer it next-day, sliced and layered with its side-dishes of braised red cabbage, wild rice, gravy and grainy mustard, on caraway rye bread.
