Ricers, such as the vintage model shown right, are great for quickly and uniformly pulverizing cooked potatoes, root vegetables, apples and such. Similar results can be achieved using an electic hand mixer, but purist prefer the old-fashioned hand-cranked ricer.
✭ ✭ ✭ We find that temperature is an issue when using a ricer, because food must be riced in batches and the process involves considerable exposure to ambient air. This is fine for applesauce, but not so great if you are aiming for a steaming hot heap of garlic riced potatoes. Whipping a quarter-cup or so of boiling hot chicken or vegetable stock into not-so-hot riced potatoes just before serving, adds an extra layer of creaminess and helps turn up the temperature.
