Purée

Culinary definition of purée :  To reduce to a thick or liquid paste using a blender, fine sieve, food mill or mortar and pestle.

pureed pumpkin 325x225The small immersion blender (shown right) is one of our favourite kitchen tools.  It can be used in cooking pots, mixing bowls, even smoothie glasses, then quickly rinsed and washed in hot soapy water in one fell swoop.  Take care  to release the on button before pulling the blender out of the purée - akin to leaving the lid off the blender.

✭  In disguise.  Puréeing sauces, soups and fillings is a good way to impart many flavours quickly, and also to disguise ingredients and/or textures that may not appeal to children - ie: broccoli, onions, anchovies, etc. Puréed tomato sauce for spaghetti or lasagna for example, is a great place to hide a multitude of tasty and nutritious vegetables (and left overs) that healthy children require but haven't yet learned to love.
