Unlike deep-frying where the level of frying oil is 'deep', pan-frying involves using a small amount of oil to fry, turning food to cook rather than submerging it entirely. Crispy Southern fried chicken is the quintessential pan-fried dish.
You can also 'deep fry' small items like potato or garlic chips in shallow oil in a frying pan, but technically that's not pan-frying. Take care when pan-frying and finishing food, especially over gas and especially if alcohol is used as an ingredient, because beads of hot fat and alcohol can launch themselves quite far up and over the edge of shallow pans and ignite.
