Cookie dough is dropped in mounds from spoons; rice and potatoes are mounded on plates. Contemporary cuisines such as Nouvelle, California and Pacific Northwest often feature food stacked or mounded on spectacular white plates (right).
✭ ✭ ✭ Home cooks can easily impress friends and family by using a basic restaurant method of mounding to plate everyday dinners. Start with warm plates. Mound a small serving of starch (mashed potatoes, rice, couscous, etc) in the middle, and gently place a serving of protein (meat or fish) in the middle of the mound of starch. Artfully lean a serving of vegetables up against the protein and finish with a drizzle of sauce of garnishing oil. For ultimate flair, garnish with chopped fresh herbs. Voila!
