Tea, marinades, simple syrups and such get their flavour from steeping dried leaves and flowers (chamomille, shown right), berries, spices, seeds and bark in hot or boiling water. Flavours can be concentrated by reducing the liquid.
✭ ✭ ✭ Reduce cherry or pomegranate juice with a few star anise pods and cinnamon stick (in a small saucepan over medium heat) until thick enough to coat the back of a spoon - makes a naturally sweet and exotic syrup topping for vanilla ice cream or pound cake. Use syrup to make Italian sodas, and to sweeten cold or hot tea. Experiment and let us know what you come up with.
