Culinary definition of husk: To remove the outer layer or husk of food, ie: corn, cardamom pods, etc.
C@H FOOD FOR THOUGHT
Generally, whole ears of corn are husked before cooking, but that may not always be the best idea. We always remove the corn silk - that beautifully soft layer of threads between the cob and the husk, but most often we ensure that the leafy husk stays attached before doing so. Corn husks make excellent semi-permeable sauna jackets for grill-roasted or steamed cobs of corn.
✭ ✭ ✭ Pull back the husks and de-silk corn cobs, then brush the cobs with plain or flavoured olive oil before turning the husks back and grilling over indirect heat on the barbeque or in the oven. Softened plain or herbed/tobascoed/spiced butter works brilliantly also. For a real treat, soak de-silked cobs of corn in water to which a cup of whole milk has been added, then turn back and tie the husks closed before grilling as above - turning every few minutes until done as you like. The natural sugars in the hot milk turbo-charges the sweetness of the corn. Same applies for boiling naked cobs of corn - add milk to the water.
