C@H FOOD FOR THOUGHT
Sometimes, recipes suggest grinding garlic or other ingredient to a paste - sometimes in a mortar and pestle. Most often however, grinding refers to the forcing of meat and/or ingredients through a mechanical hand-powered or electric device (right), to break the item(s) apart and change their compostion from solid to small or fine particles.
Mechanical devices most-often have adjustable settings, to regulate particle size. Ground beef or lamb, sausage, and applesauce are examples of ground foods - also known as forcemeats. Older and ethnic cookbooks often refer to mechanical grinding as mincing and ground meat as minced meat.
