Cooking fish, seafood, chicken etc in little sauna bundles is a great way to steam food quickly and force flavour deep inside. If you've been saving for a Miele steam oven, this may be the way to go in the interim.
Lightly olive-oiled parchment bundles of fish with small-cut veggies or spinach are high in flavour, low in fat, and fun to eat - even for kids. Exotic fish like snapper can be baked enpapillote in a banana leaf - in the oven or even on the grill. Make sure that a small amount of liquid stays sealed inside before cooking, and take care when opening when done, because hot steam can burn little fingers and nosey noses.
