Compote

Culinary definition for compote A mixture of fruits and heavy syrup, and sometimes spices, cooked together to form a condiment to accompany other foods.

pear cinnamon compote 325x225We love to make savoury compotes (like the curried pear compote shown right) to accompany ethnic foods and game. 

Use firm fruits and berries like cherries (chopped), blueberries, apples and pears (chopped), cranberries etc, some combination of sugar and/or honey, ethnic spices blends like Curry, Chinese Five Spice, or Thai, and serve alongside the main dish, or as a garnish. 

Most often we start with slow and well-caramelized onion or shallot (very thin slices or mince work best, but don't smash or the compote will be too biting, even offensive). Fruit compotes can be added to cold meat sandwiches to provide added moisture and beautiful flavour contrast. The left-over turkey and cranberry sauce/compote sandwich is one example.
